Job Description

Position Summary:  Responsible for maintaining and overseeing the daily operations of the Safe Campus kitchen including planning menus, food preparation and adhering to the USDA food program guidelines. Other responsibilities include maintaining an accurate inventory and maintaining high sanitation and health standards related to the kitchen and equipment. 

Work hours: Monday-Friday: 6:00am-2:00pm

Key Responsibilities:
•Manages all operational aspects of the kitchen independently, using good time management skills.
•Cooks and serves high quality meals in compliance with food safety standards and USDA regulations; ensures the temperatures of food are in line with safety standards.
•Provides accurate record keeping of food production.
•Manages, organizes, and takes inventory.
•Maintains all records and files of receipts and invoices.
•Plans and evaluates purchases for food/non food items based on the department’s budget and purchases food/non food items weekly
•Uses any necessary dietary guidelines in menu planning and recipe modification
•Maintains safe and sanitary conditions in the storage, preparation and service of food.
•Assists Facilities Manager with food audits.
•Maintains all food production, meal count and inventory records to remain in compliance with USDA regulations and The Family Place guidelines
•Provides feedback to Facilities Manager regarding staff’s performance.
•Attends job related training and classes related to food preparation, UDSA and (North Texas Food Bank) NFTB guidelines.
•Orders food and supplies from the NTFB; knowledgeable in selecting appropriate  donated food and drinks
•Enter the menus and meal counts into the computer on a daily basis.

Other Duties:
Performs other job-related duties as assigned.

Job Requirements

Requirements: High School Diploma (Associates Preferred) and a minimum of two (2) years of experience with meal planning and cooking experience in child care or school setting. Minimum of two (2) years supervisory experience within the food service industry. Minimum of two (2) years’ experience working with USDA food program.
 
Licenses and Certifications:

•Food Service Manager Certification
•Food Service Manager registration in the City of Dallas or the ability to obtain within thirty (30) days of hire
•Valid Texas Driver’s License and clear driving record

Knowledge and Skills and Abilities:
•Must be able to demonstrate a background of being able to work independently, to solve problems and to train personnel.
•Must have a working knowledge of USDA regulations.
•Completion of an approved food service supervisor's training course; may be substituted for a portion of required experience depending on the course.
•Must have demonstrated an ability to be accurate and dependable.
•Must have a proven background of being able to work effectively with others, be  team oriented  and good sound judgment.
•Must be clean, neat, and well organized.
•Working knowledge of food production/service equipment.
•Working knowledge of cleaning supplies/equipment.
•Skilled at using a personal computer and familiar with ordering online.

Mental and Physical Abilities:
Duties are usually performed standing with occasional periods of seating or walking. Limited physical effort is required associated with lifting and carrying objects (less than 50 lbs.). Ability to walk up and down a flight of stairs

Working Conditions:
The work is performed in kitchen areas which are well lighted but are often hot and noisy. The cooks are exposed to steam, fumes, and odors from cooking and to extreme temperature changes when entering walk-in refrigeration or freezing units. There is danger of slipping on wet floors that have been recently mopped or where food has been spilled. They are subject to possible cuts from knives and burns from steam, hot foods, stoves, and hot grease and water. Ability to work some weekends and day hours for special projects.
